Chef Humm has introduced new techniques and ingredients, such as mushrooms, seaweed, and fermentation, into his classic menu to elevate it further.
Humm was inspired to change his menu after realizing the food system required a significant overhaul. “People tend to associate meat and sustainability with industrial farms and feedlots; however, only a small percentage of worldwide livestock is raised under such conditions, making these few large producers responsible for most of our meals,” he said.
