Humm was inspired to change his menu after realizing the food system required a significant overhaul. “People tend to associate meat and sustainability with industrial farms and feedlots; however, only a small percentage of worldwide livestock is raised under such conditions, making these few large producers responsible for most of our meals,” he said.
