Last year, as COVID-19 brought down restaurants around the globe and forced many of them to close, Daniel Humm was left feeling vulnerable and at risk of losing everything he held dear. Eleven Madison Park had earned its three Michelin stars, and the top ranking on the World’s 50 Best Restaurant list, yet business was declining, and bills weren’t paid on time.
He realized that it needed to adapt for the restaurant to remain viable. So he made himself a promise: If they reopened, it would only serve plant-based fare.
Eleven Madison Park will become America’s first and only three-star restaurant to specialize exclusively in plant-based dishes, featuring vegan caviar service, roasted eggplant with coriander, and sesame tofu with squash. Chef Humm has introduced new techniques and ingredients, such as mushrooms, seaweed, and fermentation, into his classic menu to elevate it further.
Humm was inspired to change his menu after realizing the food system required a significant overhaul. “People tend to associate meat and sustainability with industrial farms and feedlots; however, only a small percentage of worldwide livestock is raised under such conditions, making these few large producers responsible for most of our meals,” he said.
Eleven Madison Park is an elegant Manhattan restaurant adjacent to Madison Square Park. It was initially established by Danny Meyer in 1998 before Humm, and Will Guidara later purchased it for transformation into a fine-dining destination known for its innovative cuisine and impeccable service.

Sirio Maccioni made Le Cirque famous with his legendary hospitality and talented cuisine, not only as the master of business but also as a gifted chef capable of creating unique menu items. As such, Le Cirque earned raves, top ratings, and most notably, AAA Five-Diamond status – this spectacular restaurant set the scene for celebration while providing top ratings with its lavish dining room designed by Adam D. Tihany to enhance an unforgettable dining experience complemented by its esteemed wine list and attentive service staff.
At its height, The Four Seasons Restaurant was one of Manhattan’s most exclusive clubby eateries. More lively than either 21′ Club or power-lunch mecca The Four Seasons, its cuisine — French with some Italian basil on top as described by Chef Maccioni — made it stand out among French old guard spots. Many great chefs such as Daniel Boulud, David Bouley, and Jacques Torres began their careers there; also; spaghetti primavera first debuted there, although not explicitly listed on its menu – only knowledgeable customers knew to ask for it when they requested it.
But times changed, and New York’s appetite for French food faded even before 9/11 destroyed its high-end scene. Uptown dining centers began shifting south, as evidenced by the opening of Balthazar in 1997.
Though the opulent dining room retains its original design, it no longer feels like a circus due to the soft lighting. Yet the menu still excels; from lobster salad to veal cheeks and black bass paupiette to modern creations like poached trout with saffron-laced scallions as well as foie gras tarte tatin with sweet apple chutney and pear sorbet, each item on it stands out beautifully.
Desserts were equally impressive, from the decadent mascarpone and beet red velvet cake to the Raspberry Parfait with Champagne Gelee, Lychee Guimauves, and Hibiscus Consomme. Additionally, the atmosphere was elegant yet romantic, and music varied between jazz, show tunes, and old standards – this made for an enjoyable dining experience!
